I have been told it is not worth the effort to make croissants in the home kitchen given our warm weather conditions. unless you have an air-conditioned kitchen or you can work really quick or dont mind popping the halfway done laminated dough into the fridge every now and then. Croissants ain't easy given the warm weather and butter melts before u can even laminate it. Scones are easy and tasty too! The direct-mix method is my least preferred as it can dry out quite easily. I like making tarts. Find that it can be very satisfying and the results can be really good.
